Housed in the historical Fullerton Water Boat House on the banks of the Singapore River, Le Saint Julien transports diners into an old world where traditional French cuisine is presented with a modern flair

Whether it's pan-fried gooseliver, crispy duck confit or a meltingly-good dark chocolate sorbet, every dish is prepared with culinary care by master-chef Julien Bompard and his team. He has won a string of awards, including Marquis Who's Who in Asia, World Gourmet Summit, Global Chef of the Year at-Sunrise and American Academy of Hospitality Sciences' World's Best Chef.

The restaurant, run as smooth as creme brulee by his wife, Edith, was World Gourmet Summit 2006 Restaurant of the Year. Oh, Edith also won the same award for being the best restaurant manager the year before.

Apart from winning the French Restaurant of the Year title at Singapore Business Review Restaurant Awards today (Feb 28, 2007), it also clinched an award for the Best French Cook Book (Singapore).

Truly, an ambassador of French cuisine on Singapore shores, Julien was inspired by the story of Saint Julien the Hospitaler penned by 19th century French writer Gustave Flaubert.

Here's a 'prophetic' excerpt: "He came to a river which was dangerous to cross because of its violence and because there was on its banks a large stretch of mud. On examining it, Julien discovered a pair of oars, and the thought came to him to spend his life in service of others..."

In the same spirit, Julien and Edith, who hails from Hong Kong, always ensure that their guests are in good hands and elegantly fed when they dine at Saint Julien, where even a quick lunch could turn into a memorable event.

Check out the 10,000 over wines and rare vintages in the cellars. For a while, you might think you're in a chateau and forget that the Fullerton Hotel and Raffles Place are just a stone's throw.

With a scenic view of Marina Bay Waterfront and the river, you can fall in love somehow with the familiar flavours of French classics here over and over again.
