Baked fish fillets

BAKED FISH FILLETS
1 fish fillet per person - any whitefish or salmon
Olive oil
Ground black pepper
Vegetables of your choice (capsicum, squash, eggplant, onions, mushrooms)

METHOD
Pre-heat oven to 200 deg C. Line a baking dish with baking paper.

Cut the vegetables in thick slices, place them in the baking dish and brush liberally with olive oil. Place the fish fillets on top of the vegetables. Cover with another layer of baking paper and fold the sides of the baking paper together to form a parcel.

Place dish in oven. Bake for around 15 minutes, or until fish flakes are tender and vegetables are soft.

You can also serve the fish on rice or pasta.
