Mussels with fennel, tomatoes & herbs

Mussels can be easy to prepare with VitaCuisine, Tefal's new steam cooker (below). Chef Nabil Taufiq Tan of Whitebait & Kale shows you how.

Ingredients

  • Live Tasmanian mussels - 300g
  • Fennel - 1 small (sliced)
  • Cherry tomatoes - 8 (halved)
  • Garlic - 2 cloves (sliced)
  • Italian parsley - a sprig
  • Dill - a sprig
  • Basil - a sprig
  • White wine - 100ml
  • Salt and pepper - to taste

Method

Place cleaned and scrubbed mussels in steel basket of Vitacuisine

Place the rest of ingredients in the top plate.

Steam for 3-4 minutes or until mussels are open.

Discard un-open mussels if any.

Place mussels in a bowl & pour the fennel, tomatoes & broth over. Serve immediately.
