2 tablespoons each: custard powder, sugar, white rum

2 ZESPRI GOLD Kiwifruit, peeled
2 ZESPRI GREEN Kiwifruit, peeled
Method
Line the base and sides of 4 lightly oiled 10cm (4 in) tart or flan dishes with pastry. Gently press the pastry against the base and sides. Press a sheet of foil against the pastry of each tart shell and freeze for 30 minutes.
Pre heat the oven to 200?? deg C (400 deg F). Place a baking tray into the oven to heat. The hot baking tray helps the base of the pastry to cook. Place the tart or flan dishes onto the hot tray and cook for 10 minutes. Remove the foil and continue cooking for another 3-4 minutes. Cool.
Combine the milk, coconut cream, custard powder and sugar and stir over low heat, until thickened. Stir in the white rum, simmer for 2 minutes and then cool.
Spoon into the tarts and smooth over the top. Just before serving, top with slices of ZESPRI Kiwifruit.
