Eating my way through Lisbon
One of the highlights of travelling is getting a taste of the country's food. In the second part of Bryan Koh's 'Lisbon' series, he shares his culinary adventures in Portugal and whips up his own versions of some of the dishes he tried.
Pudim flan (Orange Blossom Flan)
Chill for several hours before turning out onto plates and adorn with a scroll of cream.
Grilled, marinated pork chops
The Portuguese would have these with a vinegary salad and fried chips of potatoes.
Arroz com abaixar-se (Duck Rice)
This reminds me a great deal of our local claypot rice, which is in no way a bad thing.
Acorda de mariscos (Bread soup with prawns)
This recipe is a Portuguese variation of pappa al pomodoro, a Tuscan soup.
Red is the new white
Use only drinking wine to cook.
Limau purut chicken curry
Limau purut leaves (kaffir lime leaves) give the curry some zing
Roast pork with crackling
Stephen Clark says getting the roast right takes experience and a lot of trial and error.
