Best thing I ate this week: Treasure Salmon Yusheng at Lan Ting

Yusheng is far from my favourite Chinese New Year dish during the festive season. But the one at Lan Ting is one which I'd gladly tuck into again, here's why.

The freshness of the cucumber shreds and assorted vegetables hits you when you first bite into it. You know how sometimes yusheng greens can get a tad limp or dry when left out for too long? These were still crisp and retained some juiciness.

It also did not have too much of the preserved ginger and orange peels which I find often overpowers the taste of this festive salad. 

The freshness also extends to the salmon slices used - which appeared to be sashimi-grade and sliced to a considerable thickness.

Second of all, the balance between the amount of ingredients and sauce was just right. This despite us not giving any instruction to hold off the peanut oil or sweet plum sauce.

Lastly, I love my yusheng covered with copious amounts of fried crackers (which incidentally represents abundance wealth) - which this yusheng nailed. So for me, every bite was a delight of textures, and a surprising new discovery to a traditional food.
