A zesty union of sourdough and pizza at Plank

SINGAPORE - Love sourdough bread? It'd be a crime not to try it in the form of pizza.

You can do so at Plank Sourdough Pizza, the spin-off pizzeria of renowned baker Dean Brettschneider's artisan bakery and cafe Baker & Cook, and the only one in Singapore I know of so far that serves sourdough pizza.

For its pizza crusts, Plank uses the same long fermentation process as the popular sourdough bread at Baker & Cook.

A combination of flours is slowly fermented with wild yeast for up to 48 hours at 8 deg C, then pressed and baked at high heat between 380 and 400 deg C.

The result is a crisp exterior and a soft, fluffy interior, something I learned after trying two of its pizzas - Nos.3 and 7.

Yup, the pizzas at Plank are simply numbered from 0 to 7, which makes ordering a breeze.

They are all tomato sauce-based, with one for kids (No.0, $19) and one vegetarian option (No.7, $24).

The latter, consisting of portobello and oyster mushrooms with mirin, sauteed onions, shaved Parmesan and truffle oil, is a creation by Brettschneider and food blogger Leslie Tay.

It was excellent overall, I would prefer if it came with more melted cheese.

The same verdict goes for 3, which features smoked salmon, shrimps, wild mushrooms, capers, salad rocket and a sour cream and dill sauce.

For the lack of melted cheese, however, both pizzas are topped with a generous amount of the main ingredients. This saves them from tasting too tomato-ey and too tangy as a whole since the crust is already slightly sour.

If you like spicy foods, grab one of the bottles of chilli oil on the shelf. It is not as flavourful as PizzaExpress' chilli oil but certainly much more fiery.

There's also olive oil on the shelf, for diners to dip their cornicione into.

Plank serves two desserts - affogato ($9.50), which was alright, and something called Cheese Plank Pizza ($14). The toppings of caramelised garlic creme fraiche, blue cheese, fig jam, caramelised walnuts, maple syrup, fresh thyme and lemon zest give it a confusing flavour. It also sent me and my dining companions into an overdoughse after our meal of two pizzas.
