SINGAPORE - Pacific Marketplace has recently unveiled a new innovative lunch menu featuring seven freshly-baked sandwiches created around the five flavour profiles - sweet, salty, sour, bitter and umami.

"Bread is such an incredibly versatile ingredient that it can be paired with an infinite number of toppings and sandwich fillings", said Culinary Director Sumanth Das. "We wanted to create a selection of sandwiches with distinctive flavours for guests to select from. The sourdough is a classic - chewy in texture and slightly tart. The Fig and Apricot bread has sweet nectar notes, while the Broccoli, Carrot and Cheese bread packs the delicious salty flavor of Gruyere cheese in the overall taste."

Mr Das further explains: "Creating the bitter and umami notes were slightly more challenging; after extensive tastings, we selected charcoal and squid ink because this left a mildly bitter yet aromatic aftertaste, similar to that of Coffin Bay oysters. We chose sun-dried tomatoes to create umami as this packed the most savoury flavour."

The breads were then paired with sandwich ingredient staples like chicken, tuna and charcuterie to bring out an added flavor dimension and texture to the sandwiches.

Diners can choose from a selection of seven charmingly named sandwiches including "Chicken Not Little", where the smoky sweetness of grilled chicken is paired with sweet Fig and Apricot bread, each bite further enhanced by the piquant olive tapenade.

Adventurous diners wanting something more visually compelling may choose "Sea-riously, No Squidding", a delectable sandwich made from Crabmeat Salad on Charcoal Squid Ink bread. The natural sweetness of the fresh crabmeat mixed with briny tobiko perfectly counterbalances the mildly bitter hints of the Charcoal Squid Ink bread, giving the sandwich a refreshing lift in flavor dimension. Other highlights include Salami Get It Straight, an appetising combination of homemade Salami and Mortadella with Italian Provolone cheese and Peperoncino, layered on Sun-Dried Tomato Focaccia bread for perfect complementary flavours in each mouthful.

Guests can also select from the daily homemade soup and seven succulent salads for a heartier experience. The Lunch Combos are available daily from 11am to 3pm, and the sandwiches, breads and salads from 11am to 10pm daily.
