New flavour sugee cake

Let’s face it, you are probably never going to find someone who is willing to part with his family’s heritage recipe for sugee cake. And aside from a handful of home bakers and Eurasian restaurants that sell it, this is a tough cake to find.

Recently, I wrote a story about cake shops and fell in love with the Pandan Sugee Cake from Berry Gerry Bakes at Thomson V One in Sin Ming Road, off Upper Thomson Road.

Here, the rich, moist and dense semolina cake, made with a ridiculous number of egg yolks and ground almonds, is flavoured with pandan and coated with a gula melaka drizzle. The almonds are also soaked in coconut milk for a more intense flavour. It’s a new take on the classic version, which owner Geraldine Wang, 42, also sells. Prices start at $15 for a sugee loaf cake.

Other things to buy here include the buttery Earl Grey biscuits and plain and orange butter cakes.
