The Clifford Pier 

The Fullerton Bay Hotel has opened a 272-seat restaurant which takes over the space previously occupied by Chinese restaurant One On The Bund.

Named after its heritage waterfront location, The Clifford Pier serves reinterpreted Asian cuisine, Western classics and local delights.

Dishes range from laksa and mutton soup to Teochew porridge with chye poh omelette, salted duck egg and pickled mustard greens.

For afternoon tea, items include gula melaka sago creme brulee and pandan chiffon cake with coconut kaya cream.

Seasons Bistro

Seasons Bistro will be fully operational for lunch, dinner and weekend brunch on Saturday.

The menu draws inspiration from the plethora of cuisines from the Americas, and beverages include creative cocktails, craft beers and boutique wines.

Dishes include Seared Yellowtail Tuna Taco ($14++), sustainably sourced yellowfin tuna paired with guacamole, salsa verde and cotija cheese, served in a tostada shell, and the Surf & Turf Gumbo ($27++), a tomato okra stew with sustainably sourced shrimps, chicken and chorizo.

Sprigs

Contemporary bistro Sprigs is led by father-and-son team Allan Tiong, 58, and Titus, 26. They aim to turn out simple food with a touch of sophistication, the way a sprig of herb enhances the flavour of food.

Starters include grilled langoustine ($26, below) and pan-seared foie gras ($24). For mains, choose from creamy wild mushroom tagliatelle ($20), grilled Australian pork tenderloin ($28) and hearty honey spiced duck breast ($26), amongothers.

Buttero

The newest Italian restaurant in Tras Street, Buttero serves lunch and dinner, with a grand opening slated for the end of the month.

Offerings include pulled pork and waffle fries ($18), crisp milk and honey wings ($12 for six pieces and $18 for 10 pieces) and Jesus Juice ($8), a frozen granita of pinot noir, Coca Cola and mint.

The restaurant also offers lunch specials, such as shredded lamb sandwich ($16) and char-grilled calamari pasta salad ($18).

The 7th Cylinder

A quaint cafe with a motorcycle theme, The 7th Cylinder is owned by a group of motorcycle enthusiasts.

Although the menu is still a work in progress, it features items such as a customisable salad ($6.90), with add-ons such as bacon and baby potatoes (from $0.60 to $2), and the Pepperoni Chopper ($13.90), a pepperoni pork sandwich.

For drinks, choose from double-shot coffees, such as the house latte ($5), a blend of Arabica and Robusta beans, and the signature 100 per cent Arabica cappuccino ($5.50).
