Posh Nosh: A'Olivier Perles de Vinaigre

These days, food needs to look pretty for Instagram and Facebook, in addition to tasting good.

When I chance upon these vinegar pearls at Little Provence, I think of the possibilities for them. They look benign but are anything but. The Mango, Raspberry and Balsamic spheres are properly tart and fruity.

Although I love balsamic vinegar dressing on salads, its brown colour will win no awards in the food porn stakes. However, toss the salad with some fruity olive oil and scatter the black pearls among the greens.

Eat and magic happens. The pearls go pop, releasing little hits of balsamic vinegar onto the greens.

The raspberry pearls can be served with foie gras and the mango ones will go awfully well with seared scallops.
