How, I wonder, do people who shun gluten manage?
I can understand celiacs doing so, since the consequences of eating gluten are very nasty.
But some have no medical reasons for cutting it out.
Imagine giving up bread or noodles. I just cannot do it.
The smell of buttered toast in the morning is one I never tire of.
My infatuation with gluten leads me to Java+ at the lobby of the Singapore Marriott Hotel.
I had so enjoyed its Spinach Cheese Bread my colleague Wong Ah Yoke gave me some months ago.
One morning, I woke up and told myself I needed to get some more.
The handsome loaf is green from the pureed vegetable and lightly flavoured with parmesan cheese. White sesame seeds on top add a little crunch.
All the elements are in perfect balance here.
The bread, lightly springy, does not taste too vegetal and the cheese is not overwhelming.
I like it toasted and spread with cream cheese. Sliced thick, it is good for grilled cheese sandwiches too.
One rainy morning, I spooned some scrambled eggs over a toasted slice and thought of what deliciousness some people are missing.
