Posh Nosh: Tavoletta Di Cioccolato Extrafondente

Chocolatiers have been adding salt to chocolate, but few take it as far as Italian Touch!.

Its bars have a good amount of salt in them, raising the question: Is this sweet or savoury?

The answer would have to be both because the alchemy involved is fascinating.

When a chocolate square hits the tongue, the salt takes centre stage. The bar that is flavoured with salt from Cervia, an Italian seaside resort, has a gentle saltiness. The salt produced in this town does not have bitter minerals to mess with its purity. Halfway through the square, the sweetness of the chocolate comes to the fore.

Himalayan pink salt flavours the other bar and it makes a real impact. This is the one I prefer. I can never turn down a salty sweet.
