Food picks: Jewel Cafe + Bar

It seems scarcely possible that there might be far-flung places in tiny Singapore to explore.

But if dining at an offshore supply base sounds appealing, then head to the aptly name Ulu Ulu Cafe Lounge in Loyang.

There are a couple of new dishes on the menu that make the trip worthwhile.

One is Coffee Glazed Oven Baked Brisket ($18.90), a hunk of beef marinated for two days with espresso, Worcestershire sauce, barbecue sauce made in-house, and garlic, among other ingredients. It is then slow-baked for four hours and comes out glistening.

The coffee does not overpower but adds nuance to the barbecue sauce, the way chocolate makes Mexican mole special.

Curried Lamb Shank ($18.90) is a good way to use this cut of meat, which needs long, slow cooking to make it tender and luscious. Ginger, garlic, lemongrass, green chilli, chilli padi, tomatoes, mint and fresh coriander make up the ingredients for the stew.

I like how the green chillies unfurl after three to four hours in the oven.

For something more conventional but no less delicious, try the Grilled Chicken Chop ($9.90). The generous piece of meat is juicy and tender, and the teriyaki-like marinade manages not to be too sweet.

Although it is remote, Ulu Ulu is sometimes booked out for events, so call ahead before going.
