There are some dishes on restaurant menus that should never be replaced.
I think the Chilli Crab Pasta ($23) at Jewel Cafe + Bar in Rangoon Road is a real keeper.
It is dangerously spicy, but once I dig in, I cannot stop.
The first spoonful is innocuous enough and I love the fragrant ginger in the sauce. Then the chilli hits the back of my tongue and races down to my belly.
"Whoa," I exclaim, and then promptly have another forkful. This is nothing like the sickly sweet gravy that passes for chilli crab sauce in some places. The generous portion of linguine is mixed with lots of crabmeat.
Sitting on top are deep-fried slices of mantou, a nod to the steamed or fried buns that people use to mop up chilli crab gravy. Push them aside if you want, but why would you do a thing like that?
