YOU may not have seen, but you would have heard of NOX - Singapore's only "dine in the dark" eatery where visually-impaired servers guide you through a meal eaten in pitch darkness.

Using your sense of smell and taste to figure out what you're eating becomes an experience that comes to "light" at the end of it when your menu is revealed to you.

If you got your answers right the first time (or not), you can up your game with NOX's upcoming "exotic limited edition dinner menu", which is available from March 30 to April 9, at S$118++ per person or S$158++ with wine pairing.

In this set menu are 12 dishes featuring unusual and somewhat adventurous ingredients, such as the sous vide crocodile tail with mushroom in yellow wine bouillon, foie gras and wild boar-stuffed cabbage with seasonal vegetables and truffle jus, and pan-roasted kangaroo loin with braised Swiss chard, poached wine-pear, chocolate and spice sauce.

Says head chef Desmond Lee: "I designed this menu with such unusual ingredients to try to open up the diner's mind, letting them taste food that they thought they wouldn't dare to try otherwise. From creatures of the deep to land-hopping mammals ... we have incorporated these exotic ingredients into French-accented dishes."

The challenge for diners, then, is to try and differentiate crocodile tail and kangaroo loin in the dark - already a difficult task in the daytime.
