ANA partners with Regent Singapore for new in-flight menu

SINGAPORE - All Nippon Airways (ANA) will be collaborating with four award-winning restaurants in Regent Singapore to bring specially-crafted meals to its Business Class passengers this December.

Regent Singapore, a Fours Seasons hotel, will see its chefs from Summer Palace, Basilico, Tea Lounge and newly-opened bar, Manhattan, design a menu adapted from their signature dishes.

Each restaurant will be in charge of creating a menu for each quarter during the 12-month period for the five-star airline.

Passengers will be offered two choices for their entrees, and a Japanese option if they desire.

Chef Liu Ching Hai from renowned Cantonese restaurant Summer Palace will be the first to showcase his skills.

At a media conference, Chef Liu said he found the task fun and challenging. As no open fire is allowed on board, he had to craft meals which can taste as good as those at a restaurant.

Speaking to the audience, the Hong Kong chef said he wanted to present a taste of Cantonese cuisine to passengers.

In the end, he decided to incorporate ingredients of traditional Cantonese cuisine together with his favourite childhood dishes like black olive fried rice for the menu.

Passengers can look forward to entree choices of black pepper beef tenderloin or snapper fish, paired up with century eggs and youtiao (fried dough). Dessert will be a refreshing osmanthus pudding with wolfberries.

They can also customise their mains with a choice of sauces.

The collaboration will last a year until February 2015 and will be offered for passengers flying between Singapore and Tokyo, for which ANA offers three flights a day.
