Hummus
Put chickpeas, garlic, icewater, ice, and salt into a food processor and blend.

Makes approximately 200g
Ingredients:
- 200 grammes dried chickpeas (can be bought from any Indian grocer in Serangoon Road)
- 500 ml room temperature water
- 2,000 ml boiling water
- 1/2 tsp bicarbonate soda
- 1 clove garlic, whole
- 3 cubes ice
- 100 ml ice water
- 2 tsp salt
- 200 grammes tahina (a kind of sesame oil available at Mustafa Centre in Serangoon Road)
- 100 ml lemon juice
Method:
- Soak the dried chickpeas in 500 ml of water for two hours.
- Drain the chickpeas and pour them into boiling water.
- Add the bicarbonate soda to the chickpeas and let it heat for half an hour to an hour with a low flame.
- Drain the chickpeas again and let sit for half to one hour.
- Put chickpeas, garlic, ice water, ice, and salt into a food processor and begin blending, slowly adding the tahina and lemon juice. You should blend for about 15 minutes or until mixture is smooth. The mixture should be very thick and not drip off the spoon.
