UK chain does chilli crab pizza right

Popular British chain PizzaExpress is known for taking on local flavours in each of the countries it expands into.

For Singapore, where it officially opened its first outlet last week, it has created the chilli crab pizza (available in September for around $25).

It is very shiok.

I like the generous amount of crab meat, which sits among pieces of mantou, mozzarella and dashes of egg white. And while the chilli crab sauce is not very similar to that of the real dish, it is accompanied by an awesome chilli oil which makes the base very tasty in its own way.

If you can take the heat, you can request more of the chilli oil which I did and couldn't stop drizzling onto my pizza.

As for the crust, it was thin and a bit on the crispy side. It has a hint of sweetness and tastes very fresh - which is no wonder as PizzaExpress doesn't use dough that is more than 24 hours old.

According to PizzaExpress Singapore's head chef Fey Foo, the chain believes that the dough is the most important part of a pizza.

Indeed; and their dough is so good you can even eat it on its own.

PizzaExpress is also famous for its dough balls ($6), which sound and look boring but really are bite-sized goodness. They are served with three dips: pesto, garlic butter and pestorissa (a harissa-spiced tomato dip).
