Chefs with pedigree to cook here at 4XFour showcase in November

SINGAPORE - The founder of Noma in Copenhagen, chef Mads Refslund, will be in Singapore for the second 4XFour chef showcase in November.

Organised by Savour Events, which also runs the popular Savour food festival each year, the chef showcase will run for four weeks from Nov 13 at the F1 Pit Building. Four-course lunches with free flow of champagne costs $168++ a person and eight-course dinners cost $248++ a person.

Chef Refslund co-founded Noma, currently at the top of Restaurant magazine's list of World's 50 Best Restaurants, with chef Rene Redzepi in 2003. They have been credited with creating new Nordic cuisine.

He now heads the kitchen at Acme in New York City, where he serves dishes such as bison and prawn tartare, and sunchokes roasted in hay.

Three other chefs will also be cooking at the event: Nathan Outlaw of two Michelin-starred Restaurant Nathan Outlaw in Cornwall, England; Henrik Yde, chef-owner of one-Michelin starred Kiin Kiin, a modern Thai restaurant in Copenhagen and its sister restaurant Sra Bua by Kiin Kiin in Bangkok; and Rolf Fliegauf, executive chef of Ristorante Ecco and Ristorante Ecco on Snow in Switzerland, both with two Michelin stars.
