Food Picks: Italian food with heft

LaBrezza at The St. Regis Singapore has launched its latest menu by new chef de cuisine Luca Moioli, who grew up in the Lombardy region in northern Italy.

His dishes appear light and bright on the plate, which fits right in with the relaxing ambience of the poolside Italian restaurant. But don't be fooled. Some dishes have heft.

That is not always bad though. An example is the Risotto Alla Milanese ($38), a creamy rice coloured a cheerful yellow with saffron and served with a hunk of beef bone stuffed with marrow and minced meat. The various ingredients give the dish a spectrum of flavours that keep it interesting.

For the main course, try the Carre e Stinco di Agnello ($48), a combination of grilled lamb chops with hazelnut crust and slow-cooked lamb shank. It comes with potato gratin and an avocado salad with thyme sauce and pomegranate essence.
