Its springy texture and buttery richness make smoked snowfish my current obsession.
I had it recently in a salad, together with greens and orange segments, and wondered where it had been all my life.
As it turns out, it has been sitting in the smoked fish section at Meidi-Ya Supermarket.
Snowfish, depending on who you believe, is either a variety of cod or another name for the controversial escolar, known to cause stomach cramps, diarrhoea and other nasty side effects.
However, I have eaten a lot of it in the past week and nothing untoward has happened.
It is delicious in a salad, of course, and will make a good smoked fish platter together with salmon, trout and mackerel.
I like it sandwiched between buttered toast too.
This is a simple way to enjoy its beguiling smokiness, which is much more pronounced in this fish than in salmon.
