Hot Dish: Buah keluak pasta

From Friday, popular mod-Sin (modern Singaporean) chef Shen Tan will be cooking at Joan Bowen Cafe (9, Jalan Wangi, Tel: 6281-3629) for three months.

During this period, all her classics such as nasi lemak, ba chor mee pasta and Shendol will be available.

But try the new items she created for the cafe.

I am crazy about the buah keluak pasta ($18), which has a rempah made with black nut, prawns and minced pork, and the pork belly is first poached, then seared. The result is a seductive plate of food that is instantly comforting.
