Best thing I ate this week: Truffle broth ramen

'Best thing I ate' is a series where we share the best things we have eaten around Singapore. Read more here.

What: Truffle Broth Ramen ($17.90 without onsen egg)
Where: Kanshoku Ramen Bar, ION Orchard #B3-18, 2 Orchard Turn, Singapore 238801

Truffle and ramen lovers will love the Truffle Broth Ramen from Kanshoku Ramen Bar.

I had the Truffle Broth Ramen (pictured above) while my friend ordered the Truffle Ramen Dry ($16.90), with both of us opting to add an onsen egg for an additional $2.

As the bowl of ramen was placed in front of me, I detected a strong whiff of truffle almost immediately. It definitely made an #instaworthy post too.

After mixing in the generous clump of truffle with the ramen noodles and soup, I was ready to dive in. At first taste, the broth tasted just like any other tonkotsu ramen soup. But the taste transformed into something much richer the longer the truffle steeped in the broth.

According to Kanshoku Ramen, their broth is painstakingly "boiled over eight hours with filtered water without the addition of added salt and preservatives". That probably explains the authentic, robust taste.

The ramen noodles itself was soft but not too mushy, and the pieces of chashu (marinated, braised pork) were cooked just right.

If you're a fan of Japanese ramen, this truffle broth ramen is definitely worth a try. Kanshoku Ramen has other outlets at The Metropolis (9 North Buona Vista Drive) and Orchard Gateway (277 Orchard Road) as well.
