The challenge was to come up with a "Truly Singapore" ice-cream concoction.

Flavours jostling for the title included kaya, teh tarik, laksa and soya milk.

However, it was the taste of rojak that tickled the judges' taste buds most and triumphed over the rest during an ice-cream making competition on Jan 10.

The winning "Rojak Lah" ice cream was created by Amirah Asyura, Keegan Tan and Tay Hock Soon, all 16, from Serangoon Garden Secondary School.

They won $200 worth of Swensen's vouchers.

Their winning concoction was created using a smorgasbord of interesting ingredients - "like Singapore which has many different religions and races", said Hock Soon.

Tamarind juice, chilli and ginger, among other things, went into their rojak "paste", which became a sauce for the dessert, while pineapple and lime juice were used in their ice-cream mixture.

"Toppings" came in the form of dough fritter sticks and cubes of cucumber.

The Secondary 4 students were among the 10 teams competing in the finals of the sixth annual ice-cream competition jointly organised by Nanyang Polytechnic and Swensen's Singapore.

The competition aims to teach students about food science through the making of ice cream.

It also challenges the students to come up with interesting flavours to represent each year's theme.

The winners were chosen based on innovation, taste and presentation.

The teams learnt to make ice cream during two workshops conducted by Nanyang Polytechnic's School of Chemical and Life Sciences.

They were then given almost two months to brainstorm and come up with their final creations based on the theme.

The Dunearn Secondary School team came in second with its kaya toast ice cream, which used the crunch and sweetness of the popular breakfast snack to create a cool treat.

Yuan Ching Secondary School won third place with its laksa ice cream, a savoury treat that left the lingering taste of the spicy coconut gravy in the mouth.

Swensen's may put these winning flavours on its menu soon - just like they did with last year's winning flavour, the Super Nasi Lemak Sundae, which is still on the menu at $10.90.
