Recreate great dishes

FANS of the modern Asian cuisine at private dining restaurant Xi Yan can now learn to recreate its signature dishes at home.

The restaurant in Craig Road has teamed up with cooking school Palate Sensations to offer hands-on cooking classes once a month beginning next month.

The classes will be conducted by Xi Yan's chefs, who will teach people to make dishes such as white pepper prawns and the restaurant's signature tang yuan. These glutinous rice balls are filled with salted egg yolk and candied winter melon.

The three-year-old restaurant, which offers a set menu each night, is an offshoot of Xi Yan Private Dining in Hong Kong, which opened in 2000 in Wanchai.

Mr Jacky Yu, 44, partner and creative chef of the restaurants, says: 'One of the unfortunate traits of Chinese people is that they like to keep secrets. And when they die, the secrets go with them.'

'I have no interest in being a legend. I just have a desire to share my recipes and give something back to my customers.'
